Phenomenal question as always. By digging at the growths, they will essentially free them early and they'll come whipping out from the walls to attack any skeletons (and potentially Pal) in the area. By digging at the walls themselves they can open up the tunnel more deeply, although it does seem to produce a frantic beat in response as well as some very sticky, thick fluid that pools and singes any flesh it touches.
